The typical products of Valdelsa Valdicecina are many, to be explored sitting comfortably at the table or for a picnic in the lush nature. It is a simple, sincere, traditional cuisine, ideal to recover your energy after a day spent walking through the countryside or small towns.

Salamis and cheeses have consecrated the Tuscan antipasto served on wooden chopping boards, as traditional as those used in the past. If you are fond of these types of products, in Valdelsa you will greatly satisfy your wishes: here is produced the gota of Colle Val d’Elsa (cured or cooked in the wood-fired oven) and the finocchiona, a cold cut delicately spiced which has the IGP designation.
The renowned Cinta Senese, from a native pork variety already existing in the 14th century, is one of the flavours of excellence, which must not be missed! Salami, ham and excellent meat dishes are produced here and are accompanied and enhanced by the typical Tuscan “pane sciapo” (unsalted bread). The Cinta Senese is a DOP product, that is protected not only to guarantee its authenticity, but also to certify the proper animal breeding.
Pecorino cheese is also one of the undisputed products of Tuscan tradition and can be found in three variants: fresh, semi cured and cured. It is often served together with fruit mustard, jam and honey that enrich it with sweet and sour as well as fruity notes.
Among the stunning crags of Valdicecina the Pecorino delle Balze Volterrane DOP is produced, with its roots going back in the 15th century, almost as old as the Cinta Senese. This cheese stuns and uplifts the palate with its unexpectedly sweet and delicate taste. You can taste it as it is or as an ingredient in the local dishes.
Finally, the truffle of Volterra offers tastes that recall the land and woods: a real treat with which to crown the discovery of the local gastronomy, for instance during the annual event Volterragusto!
The Valdelsa and Valdicecina cuisine also contains delicious and rich soups, and pasta dishes, delightful meat dishes and many simple and traditional cakes to end each meal on a happy note, toasting with an excellent glass of wine, red or white, that you can choose according to your taste.
